I think one thing to get perspective on one another's suggestions and ways of running a tavern depends upon how many people you have showing up at an event. For example, cooking eggs to order for breakfast could work with around 30 total participants (PC & NPC's) but becomes a logisitcal nightmare for the 80+ people we have at NEROWest. That said - we have usually aroun 80 total people at NEROWest.

I don't know what VALOR averages now, but I'd say it was close to 40 PC's with another 5-8 NPC's/Staff.
Low side attendance was about 30, high side about 60.

For NERO DFW, it's usually around 30-40 total, though October was kind of light... we only had 15 or so PCs show up, and I ended up with a lot of food left over.

We average about 40- 45 players per event with some in the 30s and some in the 60s at ETN.
